Tacos don’t always have to be of the beef or chicken variety. They can be without and still be pretty darn delicious. I’m always sad to see tacos at a restaurant and I can’t get them because they have meat. Veggie tacos are few and far between and well, just not great. The only way to make them great is to make them yourself. And you can add whatever you want to them! This policy holds true for lots of meals. Most times, it’s better if you just make it yourself. Is this silly to write about? I don’t know. Maybe it’s helpful. Either way, it’s delicious. So here you have it. My favorite veggie tacos. I could eat a boatload of them. Veggie Taco Inspiration
1 jar black refried beans, heated on the stovetop
Green bell pepper and yellow onion, thinly sliced into strips and sautéed in olive oil until soft (7-10 minutes on high)
Fresh avocado, thinly sliced
Pico de gallo
Cotija cheese, crumbled
Corn tortillas, warm
Simply spread a spoonful of black refried beans onto your tortilla. Top with a handful of peppers and onions, avocado, pico, and cheese. Feel free to add hot sauce or salsa on top.
