Easy Double Bean Burgers

Guh.  I love black bean burgers.  Image

If I see a black bean burger on the menu at a restaurant, I will order it the majority of the time.  I don’t know what it is, but I love them.  And it’s not because I long for a juicy, beefy burger.  I simply think black bean burgers are delish and people should give them a shot more often.  The only problem is, most people who eat meat aren’t going to choose a black bean burger over a burger with bacon and cheese on top.  Okay.  Then I’ll make them!  Image

What I found with these burgers is they are not very spicy.  For some, that may be great.  You can just add whatever else you would like!  Next time, I’ll spice them up.  But do they cook really well, have a great taste, and hold their burger shape?  Check, check, and check!

Let’s get to it!

Easy Double Bean Burgers

Slightly adapted from How Sweet It Is

Serves 6

1 15 ounce can of black beans, rinsed and drained

1 15 ounce can of cannellini beans, rinsed and drained

1 large egg and 1 large egg white, slightly beaten

1/2 cup panko bread crumbs

3 Tbsp olive oil

3 Tbsp fresh cilantro, chopped

1/2 tsp paprika

1/2 tsp garlic powder

1/4 tsp salt

1/4 tsp pepper

6 burger buns

Avocado Basil Cream {OPTIONAL}:

1 ripe avocado, chopped

10 basil leaves, chopped

2/3 cup of plain greek yogurt

Dash of salt and pepper

Splash of water to thin, if necessary

In a large bowl, mash both beans with a masher or fork.  Add cilantro, paprika, garlic powder, salt and pepper to combine.  Add the lightly beaten eggs, olive oil, and panko to the bowl.  Mix evenly. Separate mixture into 6 equal sized patties.

Heat a skillet over medium-high heat and add olive oil to lightly coat.  Add patties and cook on each side until crisp, around 5 minutes.  Remove and serve with avocado cream or cheese or anything else!

Avocado basil cream:  Add ingredients to a food processor until thoroughly smooth.  Add a few splashes of water if necessary! Image
