ANOTHER TART! You know how puff pastry packages come with two puff pastries? Well I decided to make both of them instead of pushing the other pastry back in the freezer to ultimately face a harsh reality of freezer burn, I would make two tarts. Although, technically they are both fruit tarts if you want to talk about tomatoes being a fruit, but this one is savory and just delicious.
Three Cheese and Tomato Tart with Basil

3 large, ripe tomatoes, sliced 1/8 inch
1 puff pastry sheet, thawed and rolled out on parchment paper
2 cloves garlic, minced
1 Tbsp butter, melted
2 Tbsp fresh basil, thinly sliced
1/3 cup shredded white cheddar cheese
1/4 cup grated parmesan cheese
1/4 cup shredded asiago cheese
Salt and pepper
Preheat oven to 400 degrees.
Combine butter and garlic and brush over entire pastry. Mix the three cheeses and evenly spread it out. Top with tomatoes in whatever design you’d like 🙂
Add the fresh basil on top and add another sprinkle of parmesan over the entire tart.
Bake for 30 minutes. Let cool for 5 minutes and serve.
