Pesto Pizza with Artichokes, Burrata, and Arugula

ImageImageHappy Monday, friends!  I have a tasty pizza for you to kick off the week!  This weekend started off with “no plans” and ended completely jam packed.  How does that always happen?  I can’t complain.  It was absolutely wonderful.  The best part was finding a nice wooden chair at a garage sale for five bucks!  I can’t wait for garage sales this summer.  Too many gems that cannot be dismissed.  (and many that can be…)

But it is Monday so that’s sort of annoying.  I could go for a few more days off, but that’s just not in the cards.  Oh well.  Here we are.  Eating pizza. ImagePesto Pizza with Artichokes, Burrata, and Arugula

Makes 1 large pizza

Ingredients 

Pizza dough of your choice, I recommend this

Pesto, a few big spoonfuls

1/2 of a 14 ounce can of artichoke hearts, drained and roughly chopped

8 ounces of burrata, sliced 1/4 inch thick

2 large handfuls of arugula

Directions

Preheat the oven to 425 degrees. 

Roll your dough out into desired pizza shape.  Take your pesto and spread evenly over entire pizza. Sprinkle artichoke hearts all over.  Lay the slices of burrata throughout.  They will not cover every inch of the pizza.  

Cook pizza for 20-25 minutes, or until crust is crisp. 

Immediately top with arugula when you take it out of the oven.  Serve and enjoy!
