Mango and Avocado Salad
Adapted from Edible Perspective
For the dressing:
6 Tbsp olive oil
4 1/2 Tbsp fresh lime juice
1 1/2 tsps honey
Salt and pepper to taste
For the salad:
1 bag or bunch of fresh baby spinach
1 large, ripe avocado, cubed or sliced
2-3 fresh mangos, cubed or sliced
1/2 lime, juiced (to keep the avocado pretty)
3-4 Tbsp green onion, chopped
For the dressing: Whisk ingredients in a bowl and set aside.
For the salad: Toss avocado with lime juice before combining all salad ingredients in one large bowl. Toss with dressing.
