1 cup sugar
1/2 cup extra virgin olive oil
1/2 tsp baking powder
1 cup flour
1/4 tsp salt
Zest of 1 lemon
Juice of 2 lemons
Powdered sugar for topping
Preheat oven to 350 degrees. Butter and flour a 9 inch cake pan. Set aside.
Beat eggs and sugar together until it turns a pale color. Should be for about 5 minutes on medium-high setting.
Slowly stream olive oil and lemon juice into the egg and sugar mix, folding with a spatula.
In another bowl, whisk flour, baking powder, salt, and zest. Gently fold the dry ingredients with the wet.
Pour batter into cake pan and bake for 40-45 minutes, until toothpick comes out clean.
Let cool completely before taking it out of the pan and covering it with powdered sugar.
