THIS is one of the best salads. I can promise you that. It’s so flavorful and has great texture. I made it last night and could not stop thinking about it after it had been consumed. It’s hard to focus on watching The Voice after eating a salad like this. Yep. That good. But…um…is anyone else watching The Voice this season? It’s the best. The new judges are better than the old and I find myself laughing more and more. Anyway…..the salad……make it!

Ingredients for Dressing
2 1/2 Tbsp creamy natural peanut butter
2 Tbsp plus 2 tsp apple cider vinegar
1 Tbsp extra virgin olive oil
2 tsp maple syrup
1 1/2 tsp soy sauce
1/2 tsp orange zest
1/2 tsp freshly grated ginger
1/4 tsp freshly grated garlic
Directions for the Dressing
Place the peanut butter, vinegar, oil, maple syrup, and soy sauce in a bowl and whisk until smooth.
Add the orange zest, ginger, and garlic. Whisk and let sit for 10 minutes for flavors to shine.
If the dressing is too thick, add a tiny splash of water.
Ingredients for Salad
1 half bag of kale, stemmed and chopped (I got it at Trader Joe’s—you can also use a head of lacinato/dinosaur kale)
1 cup shelled edamame
1 red bell pepper, chopped
2 carrots, thinly sliced
1/3 cup chopped peanuts
Directions for Salad
Place the kale in a large bowl. Massage with the salad dressing so it completely coats each piece. Kale is very dry without cooking so you need to massage well!
Add the edamame, pepper, carrots, and peanuts. Toss. Top with more peanuts when you plate.
