How was your weekend? I hope you had a nice one. Mine was nice because avocados were on sale at the grocery store. I should say, “sale.” Let’s face it, those pretty green things aren’t so cheap! Anywho. I made you a salad. I hope you like it.

1 cup pearl cous cous
1 red bell pepper, chopped
1 cup black beans, rinsed and drained
4 scallions, chopped
2 Tbsp chopped cilantro
1 lime, juiced
1/2 cup salsa
2 avocados, chopped
salt and pepper to taste
Cook the cous cous according to the directions. Let cool.
In a large bowl, combine the pepper, black beans, scallions, cilantro, salsa, and lime juice. Mix.
Toss with the cous cous. Add the avocado. Season with salt and pepper.
Makes a great leftover lunch the next day!
