Spiced Sweet Potato Slices

Serves 3-4


2 large sweet potatoes, cut 1/8 in thick (some of mine were about 1/4 in thick but they just won’t be as crisp)

1 1/2 Tbsp olive oil

1/2 tsp cayenne pepper

1/2 tsp garlic powder

1/2 tsp cumin

Generous sprinkle of salt and pepper


Preheat oven to 425 degrees.

Cut sweet potatoes (skin on or off) and place in a large bowl.

Whisk your olive oil and spices.  Drizzle over sweet potatoes and thoroughly mix with your hands to coat every slice.  There won’t be a ton of oil and spice on every slice, but enough to give it a bit of a punch.

Place on a baking sheet that has been coated in cooking spray.  Lay each slice individually.  Do not stack.

Cook for roughly 22 minutes until they seem to be crisping and then take them out and flip each slice over for another 22 minutes.  You may want more or less time depending on how crispy you want them.

These are great as a side to a meal and you don’t have to feel so guilty when you eat them!
