I made a spinach salad adapted from Martha Stewart’s recipe. Martha was kind enough to share this recipe. The salad takes hardly any time to make! A few ingredients and you are sitting down to stuff your face with some tasty spinach. Perfect for when you are rushing to eat something!
This salad week was created because last week we had visitors and this week we have a visitor and you cannot make salads for visitors when there are one million amazing food options! Sometimes you just need a break and salads are the answer. Needless to say, we have been eating some tasty meals and will continue to do so. But we sure do love visitors more than salads!
Spinach Salad with Dried Cherries
Adapted from Martha Stewart
1 bag spinach
1/2 cup red onion, thinly sliced
1/2 cup dried cherries
1/2 cup raw sliced almonds
4 tsp red wine vinegar
1 Tbsp Dijon mustard
2 Tbsp olive oil
In a small bowl, whisk the vinegar, oil, Dijon, and a pinch of salt and pepper. Let it sit for a few minutes, allowing it to thicken.
Combine spinach, cherries, almonds and onion in a large bowl and toss with the dressing.
