This week is salad week!
I’m going to try to post salad recipes all week, but don’t get mad at me if you see chocolate cake or something by Friday…
Today I have a great arugula salad with caramelized onions, goat cheese, and walnuts! Super simple and tasty! If you aren’t a fan of arugula, you can easily make this salad with spinach or mixed greens.
Arugula Salad with Caramelized Onions

1 5 oz package baby arugula
1 1/2 large red onion, thinly sliced and caramelized
1 4 oz package goat cheese, crumbled
1/2 cup walnuts, chopped
4 Tbsp olive oil
2 Tbsp balsamic vinegar
For the caramelized onions: Drizzle (additional) 2 Tbsp olive oil in a pan and add onions. Sauté until golden brown on medium-high heat. This should take about 18 minutes. Remove from heat and sprinkle with salt and pepper. Add (additional) 2 Tbsp balsamic vinegar and mix.
In a small bowl, whisk the olive oil and balsamic vinegar to make your dressing.
Fill a large bowl with arugula and add the walnuts, goat cheese, and caramelized onions. Toss with the dressing and serve.
