Veggie Wrap

If you are expecting an extravagant Valentine’s Day meal, I am sorry to disappoint.  I have the opposite of extravagant for you.  Except, it’s still tasty!  This is the perfect quick lunch if you need to steer away from the same sandwich every day.  You can pack this and take it to work, as well.  The best thing is that you can really just throw whatever you’d like in the mix.  But really, this is hardly a recipe.  More of a healthy idea.  Image

Veggie Wrap 

Makes 2 small-medium wraps

Ingredients

Cream cheese, your favorite kind

2 handfuls of spinach

1/2 cucumber, thinly sliced

2 handfuls carrot strings (is that what they are called?)

1 red pepper, chopped

1/2 avocado, sliced

1/2 shallot, diced

2 Tbsp giardiniera (optional)

Directions

Smear as much cream cheese as you would like onto your tortilla.  Pile all the ingredients on top!

That’s it.  I know, what a joke of a recipe.  The only problem is, I will be eating this nonstop…
