Raspberry Sorbet



I know I have been sharing plenty of sweet recipes lately, but I just need to share one more.  If you are planning an extravagant meal for Valentine’s Day, I applaud you.  If you want to make an easy dessert that only requires a night of freezing (tonight!), you should make this raspberry sorbet!  If you are into that sort of thing…

The sorbet is tart but tasty.  Hopefully raspberries are fresh in your grocery store, otherwise you can use strawberries if those look better. 



Raspberry Sorbet

Adapted from Saveur

Serves approximately 4 (or 1)


1/2 cup sugar

3/4 cup water

1/2 tsp vanilla extract

2 cups fresh raspberries

1 Tbsp lemon juice


In a saucepan, bring water and sugar to a boil.  Reduce heat and simmer, without stirring, for 5 minutes. 

Pour the syrup in a bowl and add the vanilla extract.  Chill in freezer for 15 minutes. 

Puree the raspberries, lemon juice, and syrup in a blender until smooth.  if you want to get the seeds out, use a sieve and scrape the puree through, into a bowl.  I don’t mind the seeds so I left them in.  

Finally, pour your mixture into a container and let it freeze overnight.  Or at least 5-8 hours.
